[Taipei Seimaijo] Yamagata Prefecture, Yukiwakamaru
Product Information
Yamagata Prefecture Yukiwakamaru Rice
"Yukiwakamaru," a new original rice variety from Yamagata Prefecture, made its debut in the autumn of 2018 and immediately garnered significant attention.
Yukiwakamaru was developed by cross-breeding "Yamagata 80" and "Yamagata 90." It boasts characteristics such as resistance to lodging, high-temperature tolerance, and a low susceptibility to rice blast disease, making it a relatively easy-to-cultivate and excellent variety.
When cooked, the rice emits an appealing pristine white luster. Introduced as "Tsuyahime's handsome younger brother," it has gathered expectations from all quarters since its debut.
In terms of texture, Yukiwakamaru grains are distinct, yet possess just the right amount of stickiness—a quality that has been difficult to achieve simultaneously in other rice varieties. It can be said to offer a completely new dining experience for Japanese rice.
